I think it's more likely because the kids Yuzu are teaching seem to be absolute beginners whereas Javi and Miki's session it seemed that the kids already had some skating experience. So helmets for safety would make sense if it were their first time on ice.

Didn't Nanami Abe also coach Arakawa Shizuka early on in her career? There must be something in the water in Sendai that both Japanese Olympic FS champions have been from there. I recall seeing something that reported that after Hanyu, she didn't really take on any new skaters as coach and really did just embrace being a choreographer. With Orser, maybe it's his team, maybe it's a massive fluke, maybe it's the athletes that come looking for him. But with Yuna, then Javi, then Yuzu it is clear that he knows how to nurture already-there talent and potential. He knows how to improve upon already great jumps and skaters to make them a whole other level of great (we are called PLANET Hanyu for a reason). It will be interesting to see how his more junior skaters fare. Regardless, we can all agree that Hanyu is a once in a lifetime kind of athlete and I certainly do feel grateful to have been able to witness everything he has achieved.
